Creole Spiced Red Fish Recipe
The Redish is seasoned with old bay style seafood seasoning. It sits on a bed of crab mashed potatoes and is surrounded with a vibrant red pepper butter sauce. We add spinach and roasted cauliflower for texture.

Fish Preparation

Season the Fish
Pat the redfish fillets dry with a paper towel. Rub the Old Bay seasoning, salt, and black pepper evenly on both sides of the fillets.

Cook the Fish
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned redfish fillets and cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork. Remove from heat and keep warm.

Add Crab Meat
Gently fold in the crab meat into the mashed potatoes until just combined. Keep warm.
Red Pepper Butter Sauce Preparation

Make the Sauce
In a blender, combine the roasted red bell peppers, butter, heavy cream, salt, and black pepper. Blend until smooth and creamy. Heat in a small saucepan over low heat until warm.
Vegetable Preparation

Roast the Cauliflower
Preheat the oven to 425°F (220°C). Toss the cauliflower florets with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 20-25 minutes, until golden and tender.

Sauté the Spinach
In a separate skillet, add a little olive oil and heat over medium. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat.
