Fish

Red Pepper Butter Sauce

Method

Fish Preparation

  1. 1

    Season the Fish

Pat the redfish fillets dry with a paper towel. Rub the Old Bay seasoning, salt, and black pepper evenly on both sides of the fillets.

  2. 2

    Cook the Fish

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned redfish fillets and cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork. Remove from heat and keep warm.

Crab Mashed Potatoes Preparation

  1. 3

    Boil the Potatoes

Peel and chop the potatoes into large chunks. Place them in a large pot, cover with cold water, and bring to a boil. Cook until fork-tender, about 15-20 minutes.

  2. 4

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add the butter, milk, garlic, salt, and black pepper. Mash until creamy and smooth.

  3. 5

    Add Crab Meat

Gently fold in the crab meat into the mashed potatoes until just combined. Keep warm.

Red Pepper Butter Sauce Preparation

  1. 6

    Make the Sauce

In a blender, combine the roasted red bell peppers, butter, heavy cream, salt, and black pepper. Blend until smooth and creamy. Heat in a small saucepan over low heat until warm.

Vegetable Preparation

  1. 7

    Roast the Cauliflower

Preheat the oven to 425°F (220°C). Toss the cauliflower florets with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 20-25 minutes, until golden and tender.

  2. 8

    Sauté the Spinach

In a separate skillet, add a little olive oil and heat over medium. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat.

Plating

  1. 9

    Assemble the Dish

On each plate, place a generous scoop of crab mashed potatoes in the center. Top with a piece of the cooked redfish. Drizzle the red pepper butter sauce around the fish and potatoes. Add a side of roasted cauliflower and sautéed spinach.
