To Prepare the Jambalaya Rice

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté until the vegetables are tender, about 5 minutes.

    Add Garlic and Seasoning

    Stir in the minced garlic and Creole seasoning. Cook for an additional minute until fragrant.

    Add Rice and Liquids

    Add the rice to the pot and stir well to coat. Pour in the chicken broth and add the diced tomatoes (with juice), bay leaves, salt, and black pepper.

    Cook the Rice

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.

To Prepare the Crab Gravy

    Make the Roux

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook, stirring constantly, until it turns a golden brown, about 5 minutes.

    Stir in the finely chopped onion and minced garlic. Cook for another 3-4 minutes until the onion is translucent.

    Combine Ingredients

    Gradually add the chicken broth, stirring constantly to avoid lumps. Add the lump crab meat, Creole seasoning, Worcestershire sauce, salt, and black pepper.

    Simmer the Gravy

    Bring the mixture to a gentle simmer and cook for 10-15 minutes, allowing the flavors to meld and the gravy to thicken.

To Prepare the Red Fish

    Pat the red fish fillets dry and rub them with olive oil. Sprinkle Creole seasoning, salt, and black pepper on both sides.
