Buttermilk Fried Chicken

Marinate the Chicken
In a large bowl, combine the chicken pieces and buttermilk. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating
In a shallow dish, mix together the flour, salt, black pepper, paprika, garlic powder, and onion powder.

Coat the Chicken
Remove chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing gently to adhere. Set aside on a wire rack.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add chicken pieces and fry for 10-15 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Slowly whisk in the chicken broth, ensuring there are no lumps. Bring to a simmer, and cook until thickened.

Stir in honey, thyme, salt, and black pepper. Cook for an additional 2-3 minutes before serving.
Collard Greens

Prepare the Greens
Rinse collard greens thoroughly under cold water. Remove stems and chop leaves into bite-sized pieces.

Sauté the Greens
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add collard greens and chicken broth to the skillet. Season with salt and black pepper. Cover and cook for 15-20 minutes until tender, stirring occasionally.
Sweet Potato Cornbread

Preheat your oven to 400°F (200°C) and grease a baking dish.

In a bowl, combine cornmeal, flour, baking powder, baking soda, and salt.

In another bowl, mix together the mashed sweet potato, buttermilk, egg, honey, and melted butter.
