Buttermilk Fried Chicken

    Marinate the Chicken

    In a large bowl, combine the chicken pieces and buttermilk. Cover and refrigerate for at least 2 hours, preferably overnight.

    In a shallow dish, mix together the flour, salt, black pepper, paprika, garlic powder, and onion powder.

    Coat the Chicken

    Remove chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing gently to adhere. Set aside on a wire rack.

    Fry the Chicken

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add chicken pieces and fry for 10-15 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Honey-Thyme Gravy

    In a saucepan, melt butter over medium heat. Add flour and whisk continuously for about 2 minutes until it turns a light golden brown.

    Slowly whisk in the chicken broth, ensuring there are no lumps. Bring to a simmer, and cook until thickened.

Collard Greens

    Rinse collard greens thoroughly under cold water. Remove stems and chop leaves into bite-sized pieces.

Sweet Potato Cornbread
