    Start by thawing the lobster tails if they are frozen. Using kitchen scissors, cut down the top of the lobster shell and gently pull the meat out, keeping it attached at the base. Season the lobster meat with salt.

Butter Poaching

    Melt the Butter

    In a medium saucepan, combine the unsalted butter and water. Heat over low heat until the butter is completely melted, stirring occasionally to avoid separation.

    Poach the Lobster

    Once the butter has melted, increase the heat slightly to bring the mixture to a gentle simmer. Submerge the lobster tails in the butter and cook for about 8-10 minutes, or until the lobster meat is opaque and tender.

Finishing Touches

    Remove the lobster tails from the butter and place them on a plate. Drizzle with fresh lemon juice and sprinkle with chopped fresh herbs and black pepper. Serve immediately.
