Pork Belly

    Prepare the Pork Belly

    Preheat your smoker to 225°F (107°C). Mix brown sugar, paprika, garlic powder, onion powder, black pepper, and salt in a bowl to create a rub. Rub this mixture all over the pork belly.

    Smoke the Pork Belly

    Place the pork belly in the smoker and smoke for approximately 6 hours or until the internal temperature reaches 190°F (88°C). During the last hour of smoking, baste the pork belly with apple cider vinegar every 30 minutes.

Peach Bourbon BBQ Sauce

    Make the BBQ Sauce

    In a saucepan over medium heat, combine peach preserves, bourbon, ketchup, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Stir well and simmer for 15 minutes until the sauce thickens. Remove from heat and set aside.

Pickled Slaw

    Prepare the Slaw

    Shred the green cabbage and grate the carrot. In a large bowl, combine cabbage, carrot, apple cider vinegar, sugar, salt, and black pepper. Mix well and let it sit for at least 30 minutes to pickle.

French Fries

    Prepare the Fries

    Peel and cut the russet potatoes into thin strips. Rinse them in cold water and pat them dry. In a deep pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.
