Cabbage Steak

    Prepare the Cabbage

    Preheat your oven to 400°F (200°C). Remove any outer leaves from the cabbage and slice it into 1-inch thick steaks.

    Make the Marinade

    In a bowl, mix together balsamic vinegar, honey, olive oil, salt, and black pepper.

    Roast the Cabbage

    Place the cabbage steaks on a baking sheet lined with parchment paper. Brush both sides with the marinade. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until the edges are caramelized and the center is tender.

Sweet Potato Grit Cake

    Prepare Sweet Potatoes

    Peel and chop sweet potatoes. Boil them in salted water until tender, about 15 minutes. Drain and mash until smooth.

    Mix Ingredients

    In a mixing bowl, combine the mashed sweet potatoes, cornmeal, melted butter, milk, eggs, salt, and pepper. Mix until well combined.

    Cook the Grit Cake

    Pour the mixture into a greased baking dish. Bake at 375°F (190°C) for 30-35 minutes or until the top is golden brown and a toothpick comes out clean.

Cauliflower Purée

    Prepare Cauliflower

    Remove the leaves and stems from the cauliflower and chop it into florets.

    Cook Cauliflower

    In a pot, bring water to a boil. Add the cauliflower florets and garlic cloves. Cook until the cauliflower is tender, about 10-12 minutes.

    Blend Purée

    Drain the cauliflower and garlic, then transfer to a blender. Add butter, milk, salt, and black pepper. Blend until smooth and creamy.
