Method
Espresso & Milk Base
- 1
Pull espresso
Pull two shots (about 60 ml) of espresso using freshly ground coffee. If you don't have an espresso machine, brew a concentrated 60 ml strong coffee using a Moka pot or Aeropress.
- 2
Sweeten and salt the milk
In a small saucepan or with a milk frother pitcher, combine 1 cup whole milk, 1.5 tablespoons toasted coconut syrup, 1 tablespoon salted caramel sauce, and 1 teaspoon sea salt. Warm the mixture gently over medium-low heat until steaming (do not boil). Whisk or steam until slightly frothy and the syrups are fully dissolved and integrated.
- 3
Assemble iced base
Fill a 12-16 oz serving glass with 1 cup of ice. Pour the warmed (or cooled) coconut-caramel milk mixture over the ice, leaving room for espresso and foam. Stir briefly to chill the milk if it was warm.
- 4
Add espresso
Slowly pour the two shots of espresso over the milk and ice so you get a layered look. Stir once lightly to incorporate flavors, or leave layered if preferred.
Sweet Cream Cold Foam Topping
- 5
Make cold foam
Combine 1/2 cup heavy cream, 1/4 cup whole milk, 1 teaspoon vanilla syrup, and 1 teaspoon granulated sugar in a jar or milk frother. Froth vigorously with an electric hand frother, small immersion blender, or by shaking the jar (15-30 seconds) until thick, velvety cold foam forms. The foam should be pourable but hold some peaks.
- 6
Garnish
- 7
Drizzle 1 tablespoon caramel sauce in a spiral or zigzag over the cold foam. Sprinkle 1 teaspoon finely chopped toasted coconut flakes over the foam, then finish with a light pinch (about 1/4 tsp) of flaky sea salt to balance the sweetness.
- 8
Serve immediately with a straw and a long spoon for the cold foam. Optional: place a small paper umbrella or a lime wedge on the rim for a beachy presentation.
