No‑Bake Peanut Butter Base

Prep bowl and measure
Line a baking sheet with parchment paper or a silicone mat. Measure and have all ingredients at room temperature (peanut butter stirred smooth).

In a large mixing bowl combine 1 cup creamy peanut butter, 1/4 cup honey or maple syrup, and 1/4 tsp fine sea salt. Stir with a sturdy spoon or spatula until smooth and homogenous.

Add 1 cup rolled oats, 1 cup vanilla protein powder, 2 tbsp ground flaxseed (if using), and 1 tbsp unsweetened cocoa powder (if using). Stir until mixture is thick and uniform. The texture should be sticky but scoopable.

Fold in 3/4 cup crisped rice cereal and 2 tbsp mini chocolate chips or 2 tbsp shredded coconut if using. Gently mix to preserve crisp texture; don't overwork.

If the mixture is too dry and crumbly, add honey 1 tsp at a time until it holds together. If too wet, add 1–2 tbsp more oats or 1 tbsp protein powder to firm up.

Using a 1‑inch cookie scoop or tablespoon, portion the mixture into even balls (about 24 bites). Roll each portion between your palms to form a smooth ball. Place formed balls on the prepared baking sheet about 1/2 inch apart.

Place the baking sheet with rolled bites into the refrigerator or freezer for 15–20 minutes to firm up before coating. This makes dipping easier and prevents melting.
Chocolate Coating

Set up a dipping station: a heatproof bowl for melted chocolate and another parchment‑lined sheet for placing coated bites.

Melt 8 oz dark chocolate chips with 1 tsp coconut oil using a double boiler or microwave. For microwave: heat in 20–30 second bursts at 50% power, stirring between bursts until smooth. For double boiler: stir over gently simmering water until melted and glossy. Ensure chocolate is fluid but not hot (aim for about 90–95°F / 32–35°C).

Place the chocolate‑covered bite onto the prepared parchment. If desired, sprinkle a tiny pinch of sea salt flakes, extra shredded coconut, or mini chips on top before chocolate sets.

Repeat until all bites are coated. If chocolate thickens during the process, gently rewarm for a few seconds (microwave) or stir over the double boiler to restore fluidity. Avoid overheating.

Once all bites are coated, transfer the sheet to the refrigerator for 10–20 minutes or until chocolate is fully set.
