Peach Purée

Method

Peach Purée

  1. 1

    Prep peaches

If not already done, blanch peaches for 30–60 seconds in boiling water, then transfer to an ice bath; peel, pit, and chop until you have about 2 cups chopped peaches.

  2. 2

Dissolve 2 tablespoons sugar in 2 tablespoons warm water to make a quick syrup; add to chopped peaches along with 1 tablespoon fresh lemon juice to brighten color and flavor.

  3. 3

Transfer the peach mixture to a blender or food processor and purée until smooth (20–30 seconds). For a silkier texture, strain the purée through a fine-mesh sieve, pressing with a spatula to yield about 1 to 1 1/4 cups peach purée.

Lemonade Base

  1. 4

If using granulated sugar: combine 1 cup sugar and 1 cup hot water, stir until fully dissolved to make simple syrup; cool to room temperature. (Alternatively use 1 cup prepared simple syrup.)

  2. 5

In a large pitcher, combine 1 cup fresh lemon juice with 4 cups cold water. Add the prepared simple syrup to taste — start with the full cup for medium sweetness, then adjust if you prefer tarter lemonade.

  3. 6

Stir the lemonade base thoroughly to ensure even sweetness and lemon distribution.

Assemble & Finish

  1. 7

Pour the strained peach purée into the lemonade base and stir gently until fully incorporated. Taste and adjust balance: add up to 1–2 tablespoons lemon juice if too sweet, or 2–4 tablespoons simple syrup if too tart.

  2. 8

If you prefer a lighter, fizzy drink, fold in up to 1 cup chilled sparkling water just before serving to preserve carbonation.

  3. 9

Prepare serving glasses: fill each glass with ice (about 1 cup ice per glass), add a few mint leaves and a peach slice or lemon wheel.

  4. 10

Pour the Peach Paradise Lemonade over the prepared glasses. Gently bruise a mint leaf between your fingers and drop into each glass to release aroma. Garnish with an extra peach slice and a lemon wheel on the rim.

  5. 11

Serve immediately. Leftover lemonade (without ice) will keep refrigerated in a sealed pitcher for up to 3 days; stir or shake before serving and add fresh ice, mint, and sparkling water as desired.
