Brew the tea
Bring 480 ml water to a gentle boil. Remove from heat and add 2 tsp black tea leaves (or 2 strong black tea bags). Steep for 4–5 minutes for a robust flavor. Strain leaves (or remove tea bags) and set the brewed tea aside to cool to room temperature (about 20–30 minutes) or place in the refrigerator to chill faster (10–15 minutes).
Peach Syrup

Cook the peaches
In a small saucepan, combine 2 cups chopped ripe peaches, 1 cup granulated sugar, 60 ml water, and 1 tbs lemon juice. Bring to a gentle simmer over medium heat, stirring to dissolve the sugar. Reduce heat and simmer 8–10 minutes until peaches are very soft and the mixture thickens slightly.

Blend and strain
Remove the pan from heat and let cool slightly (3–5 minutes). Use an immersion blender or transfer to a blender and puree until smooth. For a silky tea, strain the puree through a fine-mesh sieve into a bowl, pressing on solids to extract as much syrup as possible. Discard solids left in the sieve.

Adjust sweetness and consistency
Taste the syrup. If it’s too tart, stir in up to 1–2 tbs honey or simple syrup to taste. If it’s too thick, thin with up to 1–2 tbs water. Let the syrup cool to room temperature (or chill) before assembling the drink.

Assemble the Peach Dream (iced)
Fill two serving glasses with ice (about 1 cup per glass). For each glass, add 2–3 tbs peach syrup (adjust to taste). Pour 240 ml chilled black tea into each glass over the syrup and ice. Stir gently to combine so the peach flavor is evenly distributed.

Garnish and serve
Garnish each glass with 2 fresh peach slices and 3 fresh mint leaves if using. Taste and add a little more honey or simple syrup if desired. Serve immediately.

Notes
The recipe yields about 2 servings. Leftover peach syrup keeps refrigerated in a sealed container for up to 5 days and can be used to flavor other drinks or desserts.
