Brown Sugar Cinnamon Syrup

    Make the syrup

    Combine 3 tablespoons dark brown sugar and 3 tablespoons water in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture comes to a gentle simmer, about 2–3 minutes.

    Add 1 teaspoon ground cinnamon and stir to incorporate. Allow the mixture to simmer for another 1 minute to bloom the cinnamon, then remove from heat.

    Stir in 1 teaspoon vanilla extract if using. Let the syrup cool slightly before using. Transfer to a small jar and keep warm or at room temperature; syrup will keep refrigerated for up to 2 weeks.

Espresso

    Pull the shot

    Dose 18 g freshly ground espresso into your portafilter and tamp evenly. Brew a 40 ml espresso shot (about a double or long single, depending on your machine) directly into your serving cup. If you don't have an espresso machine, brew 40 ml very strong coffee using a Moka pot or Aeropress.

Milk

    Steam and texture the milk

    Pour 8 fl oz (plus up to 1 fl oz extra if desired) cold whole milk into a chilled steaming pitcher. Purge the steam wand, then submerge and start steaming. Position the wand just below the surface to introduce a little microfoam for about 3–6 seconds, then lower the pitcher to fully heat the milk. Aim for 60–65°C (140–149°F) and velvety microfoam. If you don't have a steam wand, heat milk on the stove until hot (not boiling) and whisk vigorously or use a handheld frother to create foam.

    Tap the pitcher on the counter and swirl to remove large bubbles and integrate microfoam.

Assembly & Garnish

    Sweeten the espresso

    Add 2 tablespoons (adjust to taste) of the warm brown sugar cinnamon syrup into the brewed espresso in the serving cup. Stir to combine so the sugar dissolves fully.

    Pour the steamed milk over the sweetened espresso, holding back the foam with a spoon, then spoon or pour the microfoam on top to create a smooth latte surface. Aim for an 1:3 espresso-to-milk ratio (about 40 ml espresso to ~240 ml milk including foam).

    Optional: Sprinkle a pinch (about 1/8–1/4 tsp) of ground cinnamon or a light dusting of brown sugar on top for garnish.

    Serve immediately. Stir before drinking if desired to distribute syrup evenly.
