Cold Brew Base

Method

Prepare Cold Brew Base

  1. 1

If using cold brew concentrate: pour 12 fl oz concentrate into a measuring cup. If the concentrate is very strong and you prefer a lighter drink, dilute with up to 2 fl oz water and stir to combine. If using ready-to-drink cold brew, measure 12 fl oz.

  2. 2

Fill a 16–20 oz serving glass with 1 cup of ice. Pour the prepared cold brew over the ice, leaving room on top for cold foam and toppings (about 1–1.5 inches).

  1. 3

In a small heatproof bowl or jar, combine 2 tablespoons cookie butter and 1 tablespoon brown sugar.

  2. 4

Add 2 tablespoons hot water (near-boiling) to the bowl to loosen the cookie butter. Stir vigorously with a spoon or small whisk until the mixture becomes a smooth, pourable syrup with no lumps — about 20–30 seconds.

  3. 5

Stir in 1 teaspoon vanilla extract. Taste and adjust sweetness: add up to 1 teaspoon more brown sugar or a splash more hot water to reach a syrup consistency that will easily blend into the cold brew.

  4. 6

Measure about 2–3 tablespoons of the cookie butter syrup and pour it over the cold brew in the glass. Stir gently to combine the flavors evenly through the drink. Reserve any leftover syrup for another drink or to drizzle on top.

Make Sweet Cream Cold Foam

  1. 7

Combine 1 cup heavy cream, 1 tablespoon milk, 1 teaspoon granulated sugar, and 1 teaspoon vanilla extract in a tall jar or milk frothing pitcher.

  2. 8

Froth until thick and pourable foam forms: use an electric milk frother (about 20–30 seconds), an immersion blender (10–20 seconds), or shake vigorously in a tightly sealed jar for 30–45 seconds. Aim for a velvety, dense foam rather than stiff peaks.

  3. 9

Spoon or gently pour a 2–3 ounce layer of the sweet cream cold foam over the cold brew, leaving a bit of room for garnish.

Garnish and Serve

  1. 10

Sprinkle 2 teaspoons cookie crumbs evenly over the cold foam. If using, add a pinch of ground cinnamon on top for warmth and aroma.

  2. 11

Optionally drizzle a small spoonful of the reserved cookie butter syrup over the foam for extra shimmer and flavor.

  3. 12

Serve immediately with a straw and a long spoon for dipping. Stir before drinking to combine the cookie butter layer with the cold brew, or enjoy layered sips for contrast.
