Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle salt on both sides and let them sit for about 10 minutes to draw out moisture.

Prepare the Breading
In one bowl, combine the all-purpose flour, salt, black pepper, and cayenne pepper. In another bowl, pour the buttermilk. In a third bowl, place the cornmeal.

Coat the Tomatoes
Dredge each slice of tomato first in the flour mixture, then dip into the buttermilk, and finally coat with cornmeal. Ensure each slice is well-coated.

Fry the Tomatoes
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated tomato slices in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Dish
On a serving plate, layer the fried green tomatoes, top with a generous scoop of pimento cheese, followed by the candied ham. Garnish with chopped green onions.
