    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even-sized matchsticks or wedges, about 1/4 to 1/2 inch thick.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, which helps achieve a crispier fry.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with a clean kitchen towel or paper towels.

    Preheat the Oil

    In a deep fryer or heavy pot, heat the olive oil to 350°F (175°C) or medium-high heat.

    Fry the Potatoes

    Carefully add a batch of the dried potatoes to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the fryer.

    Drain and Season

    Remove the fries from the oil and drain them on paper towels. While still hot, sprinkle with salt, black pepper, paprika, and garlic powder to taste.

    Serve the fries hot, with your choice of dipping sauce.
