Grind the brisket point and flat together using a meat grinder or food processor until well combined. Season with salt and black pepper.

Divide the ground meat into 4 equal portions and shape them into burger patties, making a slight indentation in the center of each patty.

Cook the Burgers
Preheat a cast iron skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on one side, then flip and add a slice of American cheese on top of each patty. Cook for another 4-5 minutes until the cheese is melted and the burgers reach your desired doneness.

Assemble the Burgers
Toast the burger buns if desired. Place the cooked patties on the bottom half of each bun, top with the balsamic onions, and add the top half of the bun to complete the burger.
