Prepare the Crust
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes or until golden brown. Remove from the oven and allow to cool.

Combine Ingredients
In a saucepan, whisk together coconut milk, granulated sugar, cornstarch, and salt over medium heat.

Thicken the Filling
Continue to whisk until the mixture begins to thicken and bubble, about 5-7 minutes. Remove from heat and stir in vanilla extract and shredded coconut.

Fill the Crust
Pour the filling into the cooled crust, spreading it evenly. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Make the Whipped Cream
In a mixing bowl, combine heavy whipping cream and powdered sugar. Using a hand mixer or stand mixer, whip until soft peaks form.

Top the Pie
Spread or pipe the whipped cream over the chilled haupia filling. Sprinkle shredded coconut on top for garnish.
