    Prepare the Meat

    Cut the pork shoulder and fatback into small cubes. Combine them in a large bowl.

    Season the Mixture

    Add minced garlic, chopped rosemary, orange zest, salt, black pepper, and mix well.

    Cook the Meat

    Transfer the meat mixture to a heavy-bottomed pot. Pour in the white wine and pork stock. Add bay leaves.

    Simmer

    Bring the mixture to a simmer over medium heat. Cover and reduce heat to low, cooking for about 2 to 3 hours until the meat is tender.

    Shred the Meat

    Remove the pot from heat. Take out the bay leaves and shred the meat using two forks. Stir the mixture well.

    Cool and Store

    Let the rillette cool slightly before transferring to jars. Pour melted fat over the top to seal. Refrigerate for at least 24 hours before serving.
