    Cook the Bacon

    In a skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving the bacon fat in the skillet.

    Sauté Aromatics

    In the same skillet, add the chopped onion and cook until translucent. Add the minced garlic and sauté for another minute until fragrant.

    Mix Ingredients

    In a large bowl, combine the ground pork, cooked bacon, pistachios, chopped figs, sautéed onion and garlic, salt, black pepper, thyme, cognac, and heavy cream. Mix until well combined.

    Blend the Mixture

    For a smoother texture, you can blend the mixture in a food processor until desired consistency is reached. If using optional pâté spice blend, add it now.

    Transfer to a Baking Dish

    Transfer the mixture to a terrine or baking dish. Smooth the top with a spatula.

    Bake the Pâté

    Preheat the oven to 180°C (350°F). Place the dish in a water bath and bake for about 1 hour or until the internal temperature reaches 70°C (160°F).

    Cool and Serve

    Remove from the oven, let cool to room temperature, then refrigerate for at least 4 hours or overnight. Serve chilled with crackers or bread.
