Cheese Making Process

    Prepare the Milk

    Heat the cow's milk in a large pot over medium heat until it reaches 32°C (90°F).

    Add Cultures and Rennet

    Stir in the cheese cultures and let sit for 5 minutes. Then add the rennet and stir gently for 30 seconds. Allow the mixture to sit undisturbed for 60 minutes.

    Cut the Curd

    Once the curd has formed, cut it into 1-inch cubes. Let it rest for 5-10 minutes.

    Cook the Curd

    Slowly raise the temperature to 38°C (100°F) over the next 30 minutes while gently stirring.

    Drain the Curd

    Pour the curds into a colander lined with cheesecloth. Allow them to drain for 10 minutes.

    Mix in Salt and Spices

    Transfer the curds to a bowl and mix in the salt, cracked black pepper, and dried herbs to taste.

    Mold the Cheese

    Pack the curds into a cheese mold and press gently to shape. Allow it to sit at room temperature for 12-24 hours.

    Aging

    Remove the cheese from the mold and age it in a cool, humid place for at least 2-3 weeks, flipping every few days.
