    Make the Gelato Base

    In a medium saucepan, combine the whole milk, heavy cream, honey, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is warm and the sugar has dissolved. Do not let it boil.

    Whisk the Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and slightly thickened.

    Temper the Egg Yolks

    Slowly pour a small amount of the warm milk mixture into the egg yolks, whisking constantly to temper the eggs. Gradually add the egg yolk mixture back into the saucepan.

    Cook the Mixture

    Continue to cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon. This should take about 5-7 minutes. Remove from heat and stir in the vanilla extract.

    Chill the Mixture

    Pour the mixture into a bowl, cover, and refrigerate for at least 4 hours or until completely chilled.

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.

    Serve and Enjoy

    Scoop the honey gelato into bowls and drizzle with additional honey if desired. Enjoy!
