Prepare the crust
Preheat your oven to 325°F (160°C). In a medium bowl, combine 1 ½ cups of graham cracker crumbs, ½ cup of melted butter, and ¼ cup of sugar. Mix until well combined, then press the mixture into the bottom of a 9-inch springform pan.

Make the cheesecake filling
In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and mix well. Add the eggs one at a time, mixing on low speed until just combined. Do not overmix. Gently fold in the sour cream and mini chocolate chips.

Assemble the cheesecake
Pour half of the cheesecake batter over the crust. Spoon half of the marshmallow fluff over the batter, then add the remaining batter on top. Finally, add the rest of the marshmallow fluff and gently swirl it into the top layer.

Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set. Turn off the oven and crack the door, allowing the cheesecake to cool gradually for 1 hour.

Chill and serve
Refrigerate the cheesecake for at least 4 hours or overnight. Before serving, top with additional mini chocolate chips and toasted mini marshmallows if desired.
