Method

Crust

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are evenly coated.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from oven and let cool.

Filling

  1. 3

    Prepare the filling

In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add granulated sugar and continue to beat until well combined.

  2. 4

    Add remaining ingredients

Add sour cream, vanilla extract, and eggs to the cream cheese mixture. Mix until just combined, being careful not to overmix. Finally, add all-purpose flour and mix until just incorporated.

  3. 5

    Bake the cheesecake

Pour the filling into the cooled crust and smooth the top. Bake in the preheated oven at 350°F (175°C) for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for an hour.

  4. 6

    Cool and serve

Remove the cheesecake from the oven and let it cool completely at room temperature. Once cool, refrigerate for at least 4 hours, preferably overnight, before serving. Slice and enjoy!
