    Prepare the Patties

    Divide the ground beef into two equal portions (4 oz each). Form them into loose balls without compressing too much.

    Preheat the Griddle

    Heat a griddle or a large skillet over medium-high heat until hot.

    Cook the Patties

    Place the beef balls on the hot griddle and smash them down with a spatula to form patties. Season with salt and pepper.

    Flip and Add Cheese

    Cook for about 2-3 minutes until a crust forms, then flip the patties and place a slice of white cheddar on each patty. Cook for another 1-2 minutes until the cheese melts.

    Toast the Buns

    While the patties are cooking, split the brioche buns and toast them on the griddle until golden brown.

    Assemble the Burger

    Place the cooked patties on the bottom half of the toasted buns. Top with lettuce, tomato, onion, and pickles. Cover with the top half of the buns.

    Serve

    Serve the burgers immediately with a side of Billy Goat chips.
