Tofu Scramble

    Prepare Tofu

    Drain and press the firm tofu to remove excess moisture. Crumble the tofu into small pieces using your hands or a fork.

    Cook Tofu

    In a non-stick skillet, heat olive oil over medium heat. Add the crumbled tofu, turmeric, nutritional yeast, salt, and black pepper. Stir well to combine.

    Add Green Onions

    Chop the green onions and add them to the skillet. Cook for about 5-7 minutes, stirring occasionally, until heated through and slightly golden.

Pickled Vegetables

    Prepare Vegetables

    Julienne the carrot and daikon radish into thin strips.

    Pickling Solution

    In a bowl, combine rice vinegar, sugar, and salt. Stir until the sugar and salt are dissolved.

    Pickle Vegetables

    Add the julienned carrot and daikon to the pickling solution. Let sit for at least 30 minutes.

    Make Garlic Mayo

    In a small bowl, mix together vegan mayo and garlic powder until well combined.

Assembly

    Prepare Baguette

    Slice the baguette into 1-inch thick slices. Toast them in a toaster or on a skillet until golden brown.

    Assemble Banh Mi

    On each toasted baguette slice, spread a layer of garlic mayo, top with tofu scramble, pickled vegetables, sliced jalapeño, and fresh cilantro.

    Serve the assembled banh mi with a small side salad of mixed greens dressed with your choice of vinaigrette.
