Sausage Preparation

Make the Sausage
In a large bowl, combine the ground pork with salt, black pepper, paprika, garlic powder, onion powder, and red pepper flakes. Mix well until all ingredients are thoroughly combined.

Cook the Sausage
Heat a skillet over medium heat. Form the sausage mixture into patties and cook for 4-5 minutes on each side, or until the patties are browned and cooked through. Remove from heat and set aside.

Make the Biscuit Dough
In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually stir in the buttermilk until just combined.

Shape the Biscuits
Turn the dough out onto a floured surface and knead gently. Pat the dough into a 1-inch thick round. Use a biscuit cutter to cut out biscuits and place them on a baking sheet.

Bake the Biscuits
Preheat your oven to 425°F (220°C). Bake the biscuits in the preheated oven for 12-15 minutes or until golden brown.

Cook the Eggs
In a non-stick skillet, crack the eggs and cook over medium heat until the whites are set but the yolks are still slightly runny, about 3-4 minutes. If desired, flip the eggs for an over-easy style.

Assemble the Biscuit Sandwich
Slice the baked biscuits in half. Place a sausage patty on the bottom half, followed by the cheesy egg. Top with the other half of the biscuit. Serve immediately.
