Mix the Sausage
In a mixing bowl, combine the ground pork, salt, black pepper, sage, garlic powder, onion powder, red pepper flakes, and maple syrup. Mix well until all ingredients are evenly incorporated.

Form the Sausage Patties
Divide the sausage mixture into equal portions and form them into patties, about 1/2 inch thick.

Cook the Sausage
In a skillet over medium heat, cook the sausage patties for about 4-5 minutes on each side until they are golden brown and cooked through. Remove from heat and set aside.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Cut in Butter
Add the cold unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir until just combined. Do not overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out biscuits using a biscuit cutter or a glass.

Place the biscuits on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until golden brown.
