Sausage Preparation

    Make the Sausage

    In a large bowl, combine the ground pork with salt, black pepper, garlic powder, onion powder, red pepper flakes, and chopped sage. Mix thoroughly until all the spices are evenly distributed.

    Form the Sausage Patties

    Divide the sausage mixture into 4 equal portions and shape them into patties, about 1/2 inch thick.

    Cook the Sausage

    In a skillet over medium heat, cook the sausage patties for about 5-7 minutes on each side or until they are fully cooked through and browned. Set aside.

Biscuit Preparation

    Prepare the Biscuit Dough

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.

    Add Buttermilk

    Stir in the buttermilk until just combined. Be careful not to overmix; the dough should be slightly sticky.

    Shape the Biscuits

    Turn the dough out onto a floured surface. Pat it into a rectangle about 1-inch thick. Cut out biscuits using a biscuit cutter or a glass.

    Bake the Biscuits

    Place the biscuits on a baking sheet and bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.

Assembly

    Assemble the Biscuit

    Once the biscuits are baked, slice them in half. Place a sausage patty on the bottom half of each biscuit and top with a generous amount of shredded sharp cheddar cheese.

    Melt the Cheese

    If desired, place the assembled biscuits under the broiler for 1-2 minutes to melt the cheese before serving.
