Rinse the whole rabbit under cold water and pat dry with paper towels. Place it in a large roasting pan.

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary. Rub this mixture all over the rabbit, ensuring it gets into all the crevices.

Drizzle the olive oil over the seasoned rabbit and rub it in well.

In a medium bowl, whisk together the honey, Dijon mustard, and apple cider vinegar until smooth.

Brush half of the glaze over the rabbit, making sure to cover it evenly.
