    Prepare the Vegetables

    Dice the onion and bell pepper into small pieces.

    Sauté the Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5-7 minutes until they are softened and slightly caramelized. Season with salt and black pepper. Remove from heat and set aside.

    Whisk the Eggs

    In a medium bowl, crack the eggs and whisk them together until well combined. Season with a pinch of salt and pepper.

    Cook the Omelette

    In the same skillet, pour the whisked eggs over medium heat. Let them cook for about 2-3 minutes until the edges begin to set.

    Add Cheese and Vegetables

    Sprinkle the shredded yellow cheddar and crumbled feta cheese over one half of the omelette. Then, add the sautéed onions and peppers over the cheese.

    Fold the Omelette

    Once the eggs are fully set but the top is still slightly runny, gently fold the omelette in half over the fillings. Cook for an additional minute until the cheese melts.

    Carefully slide the omelette onto a plate and garnish with chopped fresh parsley.

    Prepare the Salad

    In a large bowl, combine the mixed greens, halved cherry tomatoes, and sliced cucumber.

    In a small bowl, whisk together 1 tablespoon of olive oil, 1 tablespoon of balsamic vinegar, and season with salt and black pepper to taste.

    Drizzle the dressing over the salad and toss gently to combine. Serve alongside the omelette.
