Chicken Marinade

    Marinate the Chicken

    In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Add the chicken breasts and ensure they are fully submerged in the mixture. Cover and refrigerate for at least 1 hour, preferably overnight.

Breading

    Prepare the Breading

    In a shallow dish, mix together flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir until well combined.

    Coat the Chicken

    Remove the marinated chicken from the refrigerator. Dredge each piece in the breading mixture, ensuring each piece is fully coated. Shake off any excess flour.

Frying

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer for accuracy.

    Fry the Chicken

    Carefully add the breaded chicken to the hot oil, working in batches if necessary. Fry for 6-8 minutes or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

    Once the chicken is cooked, remove it from the oil and place it on a paper towel-lined plate to drain excess oil.

Slaw

    In a large bowl, combine shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until the vegetables are well coated with the dressing. Let it sit for at least 15 minutes to soften.

Assembly

    Assemble the Sandwich

    Toast the burger buns lightly if desired. Place a piece of fried chicken on the bottom half of each bun, top with a generous amount of slaw, and add pickles. Place the top half of the bun on the sandwich.
