Method

Grits

  1. 1

    Cook the Grits

In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits and 1 teaspoon of salt. Reduce heat to low and cover.

  2. 2

    Stir Occasionally

Cook for 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

  3. 3

    Add Cheese and Butter

Remove from heat and stir in 1 cup of cheddar cheese and 2 tablespoons of butter until melted and smooth.

Shrimp

  1. 4

    Marinate the Shrimp

In a bowl, combine 2 tablespoons of olive oil, 2 minced garlic cloves, 2 tablespoons of lemon juice, 1 teaspoon paprika, 1 teaspoon cayenne pepper, 1 teaspoon salt, and 1 teaspoon black pepper. Add the shrimp and toss to coat. Let marinate for 15 minutes.

  2. 5

    Grill the Shrimp

Preheat the grill over medium-high heat. Grill the shrimp for 2-3 minutes on each side until they are pink and opaque.

Bacon

  1. 6

    Cook the Bacon

In a skillet, cook the 4 slices of smoked bacon over medium heat until crispy. Remove and drain on paper towels.

Cornbread

  1. 7

    Mix Dry Ingredients

In a large bowl, mix together 1 cup of cornmeal, 1 cup of all-purpose flour, 1 tablespoon of baking powder, 2 tablespoons of sugar, and 1 teaspoon of salt.

  2. 8

    Combine Wet Ingredients

In another bowl, whisk together 1 cup of milk, 1 whole egg, and 1/4 cup of melted butter.

  3. 9

    Combine and Bake

Pour the wet ingredients into the dry ingredients and stir until just combined. Pour the batter into a greased 8-inch square baking dish and bake at 400°F (200°C) for 20-25 minutes or until golden brown.
