Caramelized Onions

Prepare the Onions
Peel and thinly slice the yellow onions.

Sauté the Onions
In a large skillet, heat the olive oil over medium-low heat. Add the sliced onions and salt. Cook slowly, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.

Mix the Sauce
In a bowl, combine mayonnaise, ketchup, Dijon mustard, pickle juice, garlic powder, and paprika. Mix well until all ingredients are combined. Adjust seasoning with salt and black pepper to taste.

Form the Patties
In a bowl, mix the ground beef with salt and black pepper. Divide the mixture into 4 equal portions and form into patties, making a slight indentation in the center of each patty.

Toast the Buns
While the patties are cooking, you can toast the burger buns on the grill or in a toaster until golden brown.

Build the Burger
Spread a generous amount of Rooftop sauce on the bottom half of each toasted bun. Place the cooked patty with melted cheese on top, followed by a layer of caramelized onions and pickles. Top with the other half of the bun.
