Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy, about 8-10 minutes. Flip the bacon halfway through cooking. Once cooked, remove from the skillet and place on paper towels to drain excess grease.

Prepare the Vegetables
While the bacon is cooking, wash the lettuce leaves and pat them dry. Slice the tomato into thin rounds.

Toast the Bread
In the same skillet (or a toaster), toast the slices of bread until golden brown, about 2-3 minutes per side.

Assemble the Sandwich
On one slice of toasted bread, spread a generous layer of pimento cheese. Layer on the crispy bacon, followed by the lettuce and tomato slices. Drizzle with hot honey to taste.

Finish the Sandwich
Top with another slice of bread. Repeat for the remaining sandwiches.

Cut the sandwiches in half if desired, and serve immediately.
