Prepare the Eggs
In a small bowl, crack the two eggs and season with salt and black pepper. Whisk lightly to combine.

Cook the Eggs
In a non-stick skillet, add 1 tablespoon of butter over medium heat. Once melted, pour in the eggs. Cook to your desired doneness (sunny-side up, scrambled, or over-easy), usually about 3-4 minutes for sunny-side up.

Cook the Potatoes
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and season with garlic powder, paprika, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

Toast the Bread
In a toaster, toast the two slices of bread to your desired level of crispiness.

Once toasted, spread 1 tablespoon of butter on the toast. Optionally, add your favorite jam or jelly on top.
