For the Fried Chicken

Marinate the Chicken
In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and ensure they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Coating
In a shallow dish, mix together the all-purpose flour and cornstarch. This will be used to coat the marinated chicken.

Fry the Chicken
Heat vegetable oil in a deep skillet or fryer over medium-high heat. Remove chicken from the marinade, allowing excess to drip off, then dredge in the flour mixture, ensuring an even coating. Fry the chicken for about 5-7 minutes on each side or until golden brown and cooked through. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).

Mix Spicy Mayo
In a small bowl, combine mayonnaise, Sriracha sauce, and lemon juice. Mix well until smooth and set aside.
For the Coleslaw

Prepare the Coleslaw
In a large bowl, combine shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss well to combine. Let the coleslaw sit for at least 15 minutes to allow flavors to meld.

Assemble the Burger
Toast the burger buns lightly. On the bottom half of each bun, place a leaf of lettuce, followed by the fried chicken. Top with a generous dollop of spicy mayo and a scoop of coleslaw. Add pickles on top and cover with the other half of the bun.
