Pretzel Dough

Method

Pretzel Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes, until foamy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine flour and salt. Once the yeast mixture is ready, add it along with melted butter to the flour mixture. Stir to combine until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

  4. 4

    Shape the Pretzels

Preheat your oven to 450°F (232°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel form.

  5. 5

    Prepare Baking Soda Bath

In a large pot, bring 10 cups of water to a boil and add baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds to 1 minute, then remove with a slotted spoon and place on a greased baking sheet.

  6. 6

    Finish and Bake

Sprinkle each pretzel with coarse sea salt. Bake in the preheated oven for 12-15 minutes or until golden brown.

Homemade Queso Preparation

  1. 7

    Make the Roux

In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until bubbly.

  2. 8

    Add Milk

Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the mixture thickens, about 3-5 minutes.

  3. 9

    Melt the Cheeses

Reduce heat to low and stir in the cheddar cheese and cream cheese. Continue stirring until completely melted and smooth.

  4. 10

    Add Flavorings

Stir in the diced tomatoes with green chilies, salt, cumin, and chili powder. Cook for an additional 2-3 minutes until heated through.
