Method

Fried Chicken Strips

  1. 1

    Prepare Chicken

Cut chicken breast into strips and season with salt, pepper, and paprika.

  2. 2

    Breading Process

In one bowl, place flour. In another bowl, whisk together buttermilk and egg. Dip each chicken strip into flour, then buttermilk mixture, and back into flour.

  3. 3

    Fry Chicken

Heat vegetable oil in a frying pan over medium-high heat. Fry chicken strips until golden brown (about 5-7 minutes per side). Drain on paper towels.

Breakfast Potatoes

  1. 4

    Prepare Potatoes

Wash and dice the potatoes into small cubes.

  2. 5

    Cook Potatoes

Heat olive oil in a skillet over medium heat. Add diced potatoes and season with salt, pepper, garlic powder, and onion powder. Cook until crispy and tender (about 15-20 minutes), stirring occasionally.

Scrambled Eggs

  1. 6

    Whisk Eggs

In a bowl, whisk together eggs, milk, salt, and pepper.

  2. 7

    Cook Eggs

Melt butter in a non-stick skillet over medium heat. Pour in the egg mixture and gently scramble until cooked through (about 3-5 minutes).

Breakfast Gravy

  1. 8

    Make Roux

In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1-2 minutes until golden.

  2. 9

    Add Milk

Slowly whisk in milk until the mixture is smooth. Bring to a simmer and cook until thickened (about 5 minutes).

  3. 10

    Add Sausage

Stir in cooked sausage and season with salt and pepper. Cook for an additional 2-3 minutes.

Taco Assembly

  1. 11

    Assemble Tacos

In each taco shell, layer fried chicken strips, scrambled eggs, and breakfast potatoes. Top with breakfast gravy.
