Clean the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Rinse them under cold water and pat them dry with a kitchen towel.

Prepare the Oil and Cheese
Grate the Parmesan cheese finely and set aside. Measure out the truffle oil and balsamic vinegar.

Flash Fry the Brussels Sprouts
In a deep fryer or a large heavy pot, heat oil to 180°C (350°F). Carefully add the Brussels sprouts in batches, frying them for about 3-4 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.

Season the Sprouts
While the Brussels sprouts are still hot, toss them in a large bowl with the truffle oil, salt, and black pepper until evenly coated.

Add Parmesan and Balsamic
Sprinkle the grated Parmesan cheese over the hot Brussels sprouts and drizzle with balsamic vinegar. Toss gently to combine and ensure the cheese sticks to the sprouts.
Serving

Plate and Serve
Transfer the flash-fried Brussels sprouts to a serving platter. Optionally, garnish with additional Parmesan and a light drizzle of balsamic vinegar before serving.
