Chicken Preparation
- 1
Marinate the Chicken
In a bowl, combine buttermilk, salt, pepper, and paprika. Submerge the chicken breasts in the mixture and marinate for at least 30 minutes.
- 2
Bread the Chicken
In three separate shallow dishes, place flour in one, beaten eggs in another, and bread crumbs in the last. Dredge each chicken breast in flour, dip into the beaten eggs, and then coat with bread crumbs.
- 3
Fry the Chicken
In a large skillet, heat oil over medium-high heat. Once hot, add the breaded chicken breasts and fry for about 5-7 minutes on each side until golden brown and cooked through. Drain on paper towels.
Honey Glaze Preparation
- 4
Make the Glaze
In a small saucepan over low heat, melt the butter and then stir in the honey until well combined. Allow it to simmer for about 2-3 minutes.
- 5
Glaze the Chicken
Once the chicken is cooked, drizzle the honey glaze over the fried chicken breasts.
Biscuit Preparation
- 6
Make the Biscuit Dough
Preheat the oven to 450°F (230°C). In a large bowl, mix together flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in milk until just combined.
- 7
Bake the Biscuits
Drop spoonfuls of the biscuit dough onto a baking sheet and bake for 10-12 minutes or until golden brown.
Assembly and Serving
- 8
Assemble the Dish
On a serving plate, place the biscuits as a base. Top with fried chicken and pour additional honey glaze on top. Garnish with mixed berries.
