Marinated Chicken

    Prepare the Marinade

    In a bowl, combine the olive oil, lime juice, garlic powder, cumin, paprika, salt, and black pepper. Mix well.

    Marinate the Chicken

    Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes or up to 2 hours.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked. The internal temperature should reach 165°F (75°C).

Seasoned Rice

    Sauté the Onions and Garlic

    In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Cook the Rice

    Add the long-grain rice to the saucepan and stir for about 1-2 minutes. Add the chicken broth, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.

    Add Cilantro

    Once the rice is cooked, fluff it with a fork and stir in the chopped cilantro.

Queso

    Melt the Cheese

    In a medium saucepan over low heat, combine the Velveeta cheese and cream cheese. Stir continuously until melted and smooth.

    Add Salsa and Jalapeños

    Once the cheese is melted, stir in the salsa and sliced jalapeños. Continue to cook for an additional 2-3 minutes, stirring until well combined.

Assembly

    Plate the Dish

    On a large serving plate, create a warm bed of seasoned rice. Slice the grilled chicken and place it on top of the rice. Pour the queso over the chicken generously.

    Garnish with additional cilantro if desired, and serve warm.
