Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Crust Ingredients

    In a mixing bowl, combine 1.5 cups of graham cracker crumbs, 0.5 cups of granulated sugar, and 0.5 cups of melted unsalted butter. Mix until the crumbs are evenly coated.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the bottom of a measuring cup to pack it down tightly.

    Bake the Crust

    Bake the crust in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let it cool while preparing the filling.

Filling Preparation

    Beat the Cream Cheese

    In a large mixing bowl, beat 24 oz of softened cream cheese with an electric mixer on medium speed until smooth and creamy.

    Add Sugar and Other Ingredients

    Gradually add 1 cup of granulated sugar, 1 cup of sour cream, 1 tsp of vanilla extract, and 2 tbs of lemon juice. Mix until well combined.

    Incorporate the Eggs

    Add 4 large eggs, one at a time, mixing on low speed after each addition until just blended. Do not overmix.

    Pour Filling into Crust

    Carefully pour the cheesecake filling over the cooled crust in the springform pan.

Baking and Cooling

    Bake in the preheated oven at 350°F (175°C) for 55-60 minutes or until the edges are set, and the center is slightly jiggly.

    Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour to prevent cracking.
