Catfish Filets

    Prepare the Catfish

    Soak the catfish filets in buttermilk for at least 30 minutes to tenderize and enhance flavor.

    Prepare the Breading

    In a large bowl, mix together the all-purpose flour, cornmeal, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

    Coat the Catfish

    Remove the catfish filets from the buttermilk, allowing excess to drip off. Dredge each filet in the flour mixture, coating well.

    Fry the Catfish

    Heat vegetable oil in a deep fryer or large skillet over medium-high heat. Fry the coated catfish filets for about 4-5 minutes on each side until golden brown. Drain on paper towels.

Seasoned Fries

    Prepare the Potatoes

    Wash and cut the potatoes into thin strips to make fries.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large skillet. Fry the potato strips in batches until golden and crispy, about 5-7 minutes. Drain on paper towels.

    Season the Fries

    While fries are still hot, sprinkle with paprika, salt, and black pepper, tossing to coat evenly.

Jalapeño Cornbread

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Mix Dry Ingredients

    In a large bowl, combine cornmeal, all-purpose flour, baking powder, sugar, and salt.

    Mix Wet Ingredients

    In another bowl, whisk together milk, eggs, and melted butter. Chop the jalapeño peppers and add them to the wet mixture.

    Combine Ingredients

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

    Bake the Cornbread

    Pour the batter into a greased baking dish and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
