Prepare the Chips
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Cut the corn tortillas into quarters.

Fry the Chips
Carefully add the tortilla quarters to the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Stir in the diced jalapenos and salsa. Cook for an additional 5 minutes, stirring occasionally, until heated through. Remove from heat.

Assemble the Nachos
On a large serving platter, spread the house-made chips evenly.

Evenly distribute the chopped BBQ brisket, diced tomatoes, sliced jalapenos, and fried onions over the chips.

Spoon the warm queso over the top, followed by drizzling BBQ sauce and ranch dressing.
