Method

For the Chips

  1. 1

    Prepare the Chips

Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Cut the corn tortillas into quarters.

  2. 2

    Fry the Chips

Carefully add the tortilla quarters to the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

For the Queso

  1. 3

    Prepare the Queso

In a medium saucepan over low heat, combine the Velveeta cheese and milk. Stir continuously until melted and smooth.

  2. 4

    Add Flavor

Stir in the diced jalapenos and salsa. Cook for an additional 5 minutes, stirring occasionally, until heated through. Remove from heat.

For the Toppings

  1. 5

    Assemble the Nachos

On a large serving platter, spread the house-made chips evenly.

  2. 6

    Layer the Toppings

Evenly distribute the chopped BBQ brisket, diced tomatoes, sliced jalapenos, and fried onions over the chips.

  3. 7

    Drizzle with Sauces

Spoon the warm queso over the top, followed by drizzling BBQ sauce and ranch dressing.

  4. 8

    Serve

Serve immediately while hot, and enjoy your Brisket Nachos!
