    Prepare the Vegetables

    Dice the onion, tomato, green pepper, and mushrooms into small pieces.

    Cook the Vegetables

    In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until soft. Then add the green pepper, mushrooms, and tomato. Cook for another 3-4 minutes until all the vegetables are tender.

    Scramble the Eggs

    In a bowl, whisk together 2 large eggs with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Pour the egg mixture into the skillet with the vegetables and stir gently until the eggs are fully cooked.

    Assemble the Burrito

    Warm the tortillas in a separate pan for about 30 seconds on each side. Once warm, fill each tortilla with the scrambled egg and vegetable mixture. Roll the tortillas tightly, folding in the edges to close.

    Wash and dice the potatoes into small cubes.

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with 0.5 teaspoon of salt, 1 teaspoon of paprika, and 0.5 teaspoon of garlic powder. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy.
