Prepare the Plant-Based Chicken

Coat the Chicken
In a shallow bowl, mix the all-purpose flour, cornstarch, salt, and black pepper. In another bowl, pour the water. In a third bowl, place the seasoned breadcrumbs. Dip each plant-based chicken tender first in the flour mixture, then the water, and finally coat with breadcrumbs.

Cook the Chicken
In a large skillet over medium heat, add enough oil to cover the bottom. Once hot, add the coated chicken tenders and cook for about 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and place on a paper towel to absorb excess oil.
Make the Buffalo Sauce

Combine Ingredients
In a small saucepan, melt the vegan butter over low heat. Once melted, add the hot sauce and stir until well combined. Remove from heat and set aside.
Assemble the Sandwiches

Toss the Chicken
In a large bowl, toss the cooked plant-based chicken tenders with the buffalo sauce until well coated.

Build the Sandwiches
On the bottom half of each brioche bun, spread a tablespoon of ranch dressing. Layer the buffalo chicken, then add a slice of Swiss cheese, followed by shredded lettuce, tomato slices, onion slices, and pickles. Top with the other half of the bun.
