Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 0.5 tsp of salt. Stir well, reduce heat to low, and simmer uncovered for about 20-25 minutes, stirring occasionally until the grits are thickened.

    Add Butter and Cheese

    Once the grits are cooked, remove from heat and stir in 2 tbs of butter and 1 cup of shredded cheddar cheese until melted and creamy. Set aside and keep warm.

Cook the Shrimp

    Prepare the Bacon

    In a large skillet, cook the diced bacon over medium heat until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the skillet.

    Sauté the Shrimp

    In the same skillet with the bacon drippings, add 2 tbs of olive oil over medium-high heat. Add 2 tsp of minced garlic and sauté for about 30 seconds until fragrant.

    Season and Cook Shrimp

    Add the shrimp to the skillet and season with 1 tsp paprika, 0.5 tsp salt, and 0.5 tsp black pepper. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Stir in 1 tbs of lemon juice before removing from heat.

Assemble the Dish

    Plate the Grits

    Spoon a generous portion of the cheesy grits onto each plate.

    Top with Shrimp and Garnish

    Top the grits with the sautéed shrimp, then sprinkle the crispy bacon and chopped scallions over the top.
