Tzatziki Sauce Preparation

    Prepare the Cucumber

    Grate the cucumber using a box grater and place it in a clean kitchen towel. Squeeze out the excess moisture.

    Mix the Sauce

    In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and black pepper. Mix well until all ingredients are evenly combined. Refrigerate for at least 30 minutes to allow the flavors to meld.

Quesadilla Filling Preparation

    Prepare the Onion

    Slice the red onion into thin strips. Set aside.

    Combine Filling Ingredients

    In a large bowl, mix together the gyro meat, sliced red onion, crumbled feta cheese, and chopped sundried tomatoes until well combined.

Quesadilla Assembly and Cooking

    Heat the Pan

    In a large skillet, heat 1 tablespoon of olive oil over medium heat.

    Assemble Quesadilla

    Place one tortilla in the skillet, and evenly spread a portion of the filling mixture on one half of the tortilla. Fold the other half over the filling.

    Cook the Quesadilla

    Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the filling is heated through. Add more oil if necessary for cooking the next quesadilla.

    Repeat the assembly and cooking process for the remaining tortillas and filling.

    Cut the quesadillas into wedges and serve warm with tzatziki sauce on the side.
