Fried Green Tomatoes

Prepare the Tomatoes
Wash the green tomatoes and slice them into 1/4 inch thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out excess moisture.

Set Up Breading Station
In one shallow bowl, add the all-purpose flour. In another bowl, whisk together the eggs and buttermilk. In a third bowl, combine the cornmeal, black pepper, and cayenne pepper.

Bread the Tomatoes
Dredge each tomato slice in the flour first, shaking off excess. Then dip it into the egg and buttermilk mixture, followed by coating it in the cornmeal mixture. Repeat until all slices are breaded.

Fry the Tomatoes
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, frying for about 3-4 minutes per side or until golden brown. Remove and drain on paper towels.

Mix the Remoulade
In a bowl, combine the mayonnaise, Dijon mustard, hot sauce, minced garlic, chopped capers, chopped parsley, and lemon juice. Mix well until all ingredients are fully incorporated.

Serve the fried green tomatoes warm with a generous side of spicy remoulade for dipping.
