Prepare Rosemary Simple Syrup

Make the Syrup
In a medium saucepan, combine 1 cup of water and 1 cup of granulated sugar over medium heat.

Add Rosemary
Once the sugar has dissolved, add the fresh rosemary sprigs and bring the mixture to a gentle simmer.

Infuse
Allow the mixture to simmer for about 5 minutes to infuse the flavors. Remove from heat and let it cool.

Strain
Once cooled, strain out the rosemary sprigs and store the syrup in a sealed container in the refrigerator until ready to use.
Mix the Cocktail

Combine Ingredients
In a cocktail shaker filled with ice, combine 2 oz of Hendricks Gin, 0.5 oz of freshly squeezed lemon juice, and 0.5 oz of the rosemary simple syrup.

Shake
Shake vigorously for about 15 seconds until well chilled.

Strain
Strain the mixture into a chilled coupe or flute glass.

Top with Prosecco
Top with 3 oz of Maschio Prosecco, pouring gently to maintain the bubbles.

Garnish with a fresh sprig of rosemary for aroma and presentation.
