Crispy Parmesan Polenta Cake Recipe

Polenta Cake

    Prepare the Polenta

    In a saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt.

    Cook the Polenta

    Slowly whisk in 1 cup of polenta. Reduce heat to low and cook, stirring frequently, until thickened, about 20 minutes.

    Add Cheese and Butter

    Remove from heat, stir in 1 cup of grated Parmesan cheese and 2 tbsp of butter until melted and smooth.

    Cool and Shape

    Spread the polenta mixture into a greased baking dish and let it cool for at least 30 minutes. Once set, cut into squares or rounds.

    Fry the Cake

    In a skillet, heat 2 tbsp of olive oil over medium heat. Add polenta squares and fry until golden and crispy on both sides, about 5 minutes per side.

Sautéed Mushrooms

    Sauté the Mushrooms

    In another skillet, heat 1 tbsp of olive oil over medium heat. Add 8 oz of sliced mushrooms and cook until browned, about 5-7 minutes.

    Add Garlic and Season

    Stir in 2 minced cloves of garlic and 1 tsp of thyme. Season with salt to taste, cooking for an additional 2 minutes.

Poached Eggs

    Prepare for Poaching

    In a pot, bring water to a gentle simmer and add 1 tbsp of vinegar.

    Poach the Eggs

    Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes until whites are set and yolks are still runny.

    Remove and Drain

    Use a slotted spoon to remove the poached eggs and drain them on a paper towel.

Assemble the Dish

    Plate the Dish

    On each plate, place a crispy polenta cake, top with sautéed mushrooms, and carefully place a poached egg on top.

    Add Finishing Touches

    Drizzle with truffle oil and sprinkle with extra grated Parmesan cheese before serving.
