Polenta Cake

Prepare the Polenta
In a saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt.

Cook the Polenta
Slowly whisk in 1 cup of polenta. Reduce heat to low and cook, stirring frequently, until thickened, about 20 minutes.

Add Cheese and Butter
Remove from heat, stir in 1 cup of grated Parmesan cheese and 2 tbsp of butter until melted and smooth.

Cool and Shape
Spread the polenta mixture into a greased baking dish and let it cool for at least 30 minutes. Once set, cut into squares or rounds.

Add Garlic and Season
Stir in 2 minced cloves of garlic and 1 tsp of thyme. Season with salt to taste, cooking for an additional 2 minutes.
Poached Eggs

Prepare for Poaching
In a pot, bring water to a gentle simmer and add 1 tbsp of vinegar.

Poach the Eggs
Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes until whites are set and yolks are still runny.
